Warm Chicken Caprese Spinach Salad

About This Recipe

This warm entree salad is an Italian taste treat--flavored with tomatoes, basil, and balsamic vinegar.  It's not only high in protein and low in calories and fat, it packs 10 whopping grams of dietary fiber.  Moreover, it has no starch, so it's a perfect quick and easy supper for anyone who is insulin resistant or diabetic.  Best of all, the taste is fantastic!

Ingredients

  • 4 Boneless Chicken Breast Halves
  • Montreal Chicken Seasoning
  • 2 Tablespoons Extra Virgin Olive Oil (EVOO) divided
  • 3 Cloves Garlic
  • 2 Baskets Red Grape Tomatoes (or 1 Basket Red and 1 Basket Yellow)
  • 1 (6 oz) Bag Baby Spinach Leaves
  • 1 (6 oz) Can Medium Ripe Black Olives (halved)
  • 1 (15.5 oz) Can Great Northern Beans (thoroughly rinsed and drained)
  • 2 (1 oz) Packages Fresh Basil (minced)
  • 1/2 Cup Minced Italian Parsley
  • 4 Tablespoons Balsamic Vinegar
  • 1/2 teaspoon each Salt and Freshly Ground Black Pepper (or to taste)
  • 1/2 Cup Parmesan Cheese (shredded or grated)


Directions

  1. Sprinkle Montreal Chicken seasoning on both sides of chicken breasts.

  2. Add 1 Tablespoon EVOO to a medium saute pan set over medium heat. Add the chicken breasts and saute about 10 minutes, turning once, until internal temperature is 165 degrees F. Transfer to a platter and tent with foil.

  3. In the same pan, add the second tablespoon EVOO and the pressed garlic, stir until aromatic. Add the Tomatoes, Beans, Black Olives, and salt and pepper. Saute 4-5 minutes and add the Balsamic vinegar. Remove from heat and stir in minced basil and parsley.

  4. Divide spinach leaves among 4 dinner plates.

  5. Slice chicken breasts on the bias and top each spinach bed with 1/4 of the chicken.

  6. Ladle the hot tomato/balsamic mixture over the chicken and garnish generously with Parmesan cheese.

About this Recipe

Everyone loves good old-fashioned spaghetti and meatballs. These meatballs have a flavor similar to my Northern Italian Stuffed Pasta Shells and our family's homemade meat ravioli (recipe coming soon). For a quick after-work meal, cook this in your slow cooker--pair it up with a nice salad and maybe some whole-grain garlic bread, and you're good to go!

Ingredients


Meatballs
  • 1 Pound Ground Pork
  • 1 Pound Ground Sirloin
  • 1/2 Cup Parmesan Cheese
  • 1/2 Cup Italian Seasoned Bread Crumbs
  • 4 Cloves Garlic (pressed or finely minced)
  • 3 Large Eggs
  • 1-1/2 teaspoons Italian Seasoning
  • 1/2 teaspoon Dried Oregano
  • 1/4 teaspoon Ground Cloves
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1/4 Cup PACKED Minced Fresh Parsley

Sauce
  • 5 Cloves Garlic (pressed)
  • 1 (12-oz) Can Tomato Paste
  • 4 (14.5-oz) Cans Crushed Tomatoes (or petite diced)
  • 2 teaspoons Salt
  • 1 teaspoon Freshly Ground Pepper
  • 1 Tablespoon Dried Basil (crushed)
  • 1 Tablespoon Italian Seasoning (crushed)
  • 1 teaspoon Dried Oregano (crushed)
  • 2 Dried Bay Leaves
  • 1/4 Cup Dry Red Wine
  • 1-1/2 Tablespoons Worcestershire Sauce
  • 2 (4-oz) Cans Button Mushrooms (stems and pieces are fine)

Directions

  1. Make Meatballs: Preheat oven to 425 degrees F. Using clean hands, thoroughly mix together all the meatball ingredients in a medium bowl. Form mixture into 24 balls and place on a foil-lined baking sheet. Bake 15 minutes until meatballs are nicely browned on the outside.

    Brown at 425 degrees F. for 15 Minutes

  2. Make Sauce: Into a medium mixing bowl, stir together all sauce ingredients until thoroughly incorporated.

  3. Cook Sauce and Meatballs:
    Method 1:  Place browned meatballs into a 5 qt. or larger dutch oven with cover, pour the sauce over, cover and bake at 325 degrees F for 2-1/2 hours.

    Method 2:  Place browned meatballs into a large slow cooker, pour the sauce over, cover, and cook at low setting for 6-8 hours.

  4. Prepare one pound pasta according to package directions. Divide pasta among 8 pasta bowls, top with a generous ladle of sauce, and 3 meatballs. Garnish with freshly-grated Parmesano Reggiano Cheese.

Northern Italian Stuffed Pasta Shells

About This Recipe

Loaded with flavor, age-defying lycopene, and antioxidant-rich herbs, this dish is a favorite of young and old alike.  Note from the nutritional information that these shells are almost a perfect 40/40/20 split between Protein, Carbs and Fat. The recipe makes two (9x13) baking pans, each with 6 generous servings. Filled unbaked shells can be frozen for up to a month. I always make two pans and freeze one for a later date if not entertaining a crowd.

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 3 (10 oz.) Packages Frozen Chopped Spinach (thawed, and squeezed dry)
  • 3 Pounds Ground Round (the leanest you can find)
  • 1 (8 oz.) Package LIGHT Cream Cheese (Neufchatel)
  • 1 (24 oz.) Carton Lowfat Cottage Cheese
  • 2 Large Onions Diced
  • 4 Large Garlic Cloves (finely minced or pressed)
  • 3 teaspoons Italian Seasoning
  • 2 teaspoons Ground Nutmeg
  • 1/2 teaspoon Ground Cloves
  • Salt and Fresh Ground Pepper to taste
  • 2 (5 oz.) Packages Shredded Parmesan Cheese (or 10 oz. of Grated Parmesan Cheese)
  • 3 Large Eggs
  • 1-1/2 (12 oz.) Packages Jumbo Pasta Shells
  • 6 Cups of Your Favorite Bottled Meatless Tomato Pasta Sauce (I like Classico, Tomato Basil--see Amazon link below)


Directions

  1. In a dutch oven set over medium heat, saute onions and garlic in the EVOO until translucent. Remove to a bowl and set aside.
  2. In the same pan, brown the ground round, breaking it up with a fork. Drain off any fat. Reduce heat to medium-low.
  3. To the beef, add the spices, salt and pepper to taste, and mix thoroughly.
  4. Next add the onions and garlic, cottage cheese, cream cheese, and 5 ounces (half) of the Parmesan cheese. Stir over medium-low heat until the cheeses are melted and the mixture is nice and creamy.
  5. Add the thawed and drained spinach and mix until thoroughly incorporated.  Taste and adjust seasonings as desired.
  6. Cool slightly, add the eggs, and mix well.
  7. Cook pasta shells according to package directions until al dente. Drain and cool slightly.
  8. Thoroughly spray TWO 9x13 baking dishes with nonstick cooking spray.
  9. Preheat oven to 350 degrees F.
  10. Evenly coat the bottom of each baking dish with 1.5 Cups (3 cups total) of the Pasta Sauce.
  11. Stuff shells with the filling mixture and place half the shells into each pan, open side up.
  12. Drizzle remaining pasta sauce over the shells and sprinkle remaining Parmesan cheese over both pans of shells.
  13. Bake shells (covered with foil that has been sprayed with cooking spray) for 1 hour.

Crowd-Pleasing Power Foods for Superbowl Sunday

On the cusp of Superbowl XLV, I know you're already racking your brain over what food to serve!  Relax.  But whatever you do, don't limit yourself to boring Brats, Beer, and Chips. Introduce your Superbowl guests to some awesome-tasting powerfoods. Here are three Anabolic food options that you can prepare in advance. Most importantly, your party guests will be lining up for seconds and thirds!


Option 1

Try these tasty meat, spinach, and cheese-stuffed Northern Italian Stuffed Pasta Shells, and then score again with your guests by pairing it up with with Marinated Mediterranean Longevity Salad and some multigrain garlic bread.  Everyone loves Italian!  This is an EASY touchdown that will have the fans roaring.

Option 2

How about the ever-popular Tex-Mex Favorite of many Super Bowl parties--Anabolic White Bean Chili with Grilled Chicken. This hearty pot of goodness can stand alone as a one dish meal that you can prepare in 30 minutes or less.  When Tim and Anne Miller used to live in Chassell, they would request that I prepare this Superbowl favorite year after year.

Option 3

Another Tex-Mex favorite that will have them begging for more. . .Champion Chicken Enchiladas. Although this too can stand on its own as a one-dish meal, it works very well paired with Shirley's Black Bean Cardio Salad (with or without the tuna).

There you have it. . .Three very tasty, healthy, and easy to prepare menu options for your Superbowl Party.  Add a nice assortment of beers, wine and soft drinks; and when your guests offer to bring something, ask for an appetizer, or cookies and bars for dessert.  This year's bowl game may not have cheerleaders on the screen, but the fans in your living room will be cheering for the cook!

Almond and Anise Biscotti (Authentic Version)

The Authentic Almond and Anise Biscotti were a hit at the Italian Party last night at The Miscowaubik Club. Just before they were served (with our gelato), I taught everyone how to say the word and eat biscotti like a real Italian--by dunking them in your wine. It's something about the alcohol in the wine that brings out the essential oils of the anise and almond more so than with coffee or tea. Dunk them in whatever you like, just don't say "Bis SCOTTY"!

I started working on a sugar-free, high protein anabolic version of these as well.  I need to do a little more experimenting to get the texture and sweetness just right.  These will have half the calories, 1/3 of the carbs, and double the protein of the authentic recipe.



This recipe uses two silicone baking sheets. I prefer the original DeMarle Silpat over other brands. If you do any amount of baking, these are great. They provide a non-stick insulated surface to your baking pan, preventing sticking and burning at the same time. They're washable and last for years.

Ingredients


  • 2 Tablespoons Anise Seed (pulverized in a small food or coffee grinder)
  • 2 Cups Sugar
  • 1 Cup (2 Sticks) Butter, softened
  • 4 Large Eggs
  • 1/3 Cup Brandy
  • 1.5 teaspoons Pure Anise Extract (get a good brand--Dollar Store Anise is weak)
  • 1 teaspoon Pure Vanilla Extract
  • 4.5 Cups Unbleached All Purpose Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 Cup Slivered Blanched Almonds (toasted and coarsely ground)


Directions


  1. Preheat oven to 350 degrees F.  Line two heavy baking sheets with silicone baking mats.
  2. Pulverize the anise seed in a small food grinder or coffee grinder.  This releases more essential oil from the seeds.
  3. Combine the flour, salt, and baking powder and set it aside.
  4. Combine the brandy, anise, and vanilla and set it aside.
  5. Using your heavy duty mixer (with paddle attachment) cream butter, pulverized anise seed, and sugar.
  6. With the mixer running, add the eggs one at a time, beating after each addition.
  7. Gradually add dry ingredients and the brandy mixture ALTERNATING 1/4 of each at a time, beginning and ending with the dry ingredients. Add the coarsely-ground almonds and mix until just combined.  You will have soft and somewhat sticky dough.
  8. Drop the dough by spoonfuls onto your LINED baking sheets, forming two narrow strips on each baking sheet.  Working with wet hands, form the soft dough into four narrow logs.  The logs will spread and widen during baking.
  9. Bake for 28-30 minutes, and unless you have a convection oven, rotate the pans every 10 minutes for even browning.
  10. Cool logs to room temperature, and reduce oven temperature to 300 degrees.
  11. Using a very sharp knife, carefully slice the logs on diagonal into 1/2"to 3/4" slices.
  12. Lay the sliced biscotti on the lined cookie sheets and toast in the oven for about 40 minutes, turning once after 20 minutes, until biscotti are crisp-tender and golden brown.

Body Builders' High Protein Homemade Fettuccine

About this Recipe

My grandmother Vincenza used to make these homemade noodles by hand at least once a week.  She would pile the flour onto the kitchen counter, and make a well in the center of the flour mound.  Into that well, she'd put the eggs and oil and start beating the eggs with her hands, gradually working in the flour a little at a time. . .then knead the dough into a silky ball which was as smooth and silky as a baby's butt.

Today we have heavy duty mixers that make her all afternoon task a breeze. Her original recipe called for 3 to 3.5 cups of unbleached flour.  To kick up the protein and reduce the carbohydrates, this recipe replaces 2/3 of the flour with a combination of UNFLAVORED whey protein powder (which has a very slight nutty taste) and chickpea flour.  These homemade noodles have about half the carbs and 4 times the protein of conventional store bought pasta. All that aside, NOTHING compares to the taste and texture of these egg noodles.  If you make them with all unbleached flour (instead of the chickpea flour/protein powder/unbleached flour combination) you'll have my grandmother's authentic recipe. . .but with double the carbs and much less protein of course.  However you make them, be sure to use unbleached flour rather than bleached, as it makes the dough much more silky and elastic, so it will stretch much easier.

Ingredients


  • 1 Cup Chickpea Flour (also called Besan or Gram--not graham flour)
  • 1-1/4 Cups UNFLAVORED Whey Protein Powder
  • 1 Cup All Purpose UNBLEACHED Flour
  • 1 teaspoon Salt
  • 5 Large Eggs
  • 4 Tablespoons Extra Virgin Olive Oil (divided)

1.  Mix dry ingredients together in the bowl of your heavy duty mixer.  Make a well in the center of the flour, and add the eggs and 2 Tablespoons of the olive oil.



2.  Using your electric mixer fitted with a dough hook, mix and knead on medium-low speed until a soft, silky, and slightly sticky dough is formed.  The dough should be very smooth.  If dough is too dry, add up to 1/4 cup water a tablespoon or two at a time.  If dough is too wet, add a bit more unbleached flour a tablespoon at a time.



3.  Coat a clean small mixing bowl with remaining 2 Tablespoons of Extra Virgin Olive Oil.  Turn the dough a couple of times into the oiled bowl to evenly coat the dough with olive oil.  Cover with plastic wrap and allow dough to rest at room temperature for at least 30 minutes or longer. Resting the dough is very important and will make the dough much easier to work with.



4.  Once the dough has rested, generously flour a large work surface with a mixture of 50% chickpea flour and 50% unbleached flour.  Using a rolling pin, roll and stretch the dough to approximately a 30x30 rough rectangle.  Don't worry if it's not perfectly shaped or has a small hole or two. Generously dust the dough with more flour as you stretch and roll the dough.  Allow the dough to dry slightly, approximately 30 minutes +/-.  Drying time will vary with humidity conditions.  The dough should be pliable and dry enough not to stick to itself when folded, but not so dry that it becomes brittle and breaks at the folds.



5.  Working from two sides, fold the dough over onto itself in 2-3 inch folds, dusting each fold with flour.  Keep folding like a business letter until you have a 3-4 inch wide layered strip.


6.  Slice the strip into fettuccine sized ribbons and unfold them a few at a time.  Set on a floured surface to dry a bit more.




7.  Bring a large pot of salted water to a rapid boil.  Drop the pasta into the boiling water and cook for 5-7 minutes for al-dente.  Serve with your favorite pasta sauce.  Uncooked noodles will keep in the refrigerator for up to a week and can be frozen for up to a month.  When boiling frozen noodles, do not thaw them--just throw the frozen noodles into the boiling salted water.

Italian Style Chicken with Pasta

About this Recipe

This recipe comes from my grandmother, Vincenza Villanelli.  She was a great Italian cook.  Most of the food she prepared we considered "Peasant Food". And looking back, most everything she prepared was healthy--lots of cooked tomato products; plenty of garlic and onions, dandelion salad, sauteed organic greens that she gathered in the woods; wild mushrooms; fava beans; lean meats; baccala (cod fish); anchovies; and she always cooked with olive oil.

This recipe has some fat, as the sauce gets it's richness from the chicken stewing in the sauce--skin, fat, bones, and all.  Grandma would always say "You gotta have fat chickens that are nice and yellow if you want a good sauce."  She also used to say that certain brands of tomato paste were bitter--always use Hunt's.  If you happen to use a different brand of tomato paste and your sauce turns out a little bitter, just add about 1 Tablespoon of brown sugar before returning the chicken to the sauce at the end.

  • 3-4 Tablespoons Extra Virgin Olive Oil
  • 6 Cloves Garlic (minced or pressed)
  • 1 (12-oz) Can Tomato Paste
  • 4 (14.5-oz) Cans Crushed Tomatoes (or petite diced)
  • 1 Tablespoon Salt
  • 2 teaspoons Freshly Ground Pepper
  • 1 Tablespoon Dried Basil (crushed)
  • 1 Tablespoon Italian Seasoning (crushed)
  • 1 Dried Bay Leaf
  • 2 (4-oz) Cans Button Mushrooms (stems and pieces are fine)

  • Parmesan Cheese (omit for Kosher)

Directions

  1. Preheat oven to 350 degrees.  Select a medium sized non-reactive roaster with a cover or an oven-safe dutch oven with cover. 
  2. Place the open roaster over medium heat and add the olive oil and garlic.  Heat until the garlic begins to sizzle.
  3. Season chicken pieces with salt and fresh ground pepper to taste.
  4. Brown the seasoned chicken pieces on the stove top until the chicken pieces are golden brown (about 15 minutes).
  5. In a bowl stir together the tomato paste, crushed tomatoes, salt, pepper, basil, bay leaf and Italian seasoning.
  6. Pour the tomato mixture over the chicken, cover the roaster, and bake in the oven for 1 hour or just until the chicken is cooked through.  Remove the chicken from the sauce and set aside.
  7. Add the mushrooms (juice and all) to the sauce, replace the cover and continue baking the sauce for another hour.
  8. About 15 minutes before serving, return the chicken to the sauce and place the roaster back into the oven until chicken is heated through.  Meanwhile, cook your favorite pasta until al-dente.
  9. Serve chicken over a generous serving of pasta and plenty of the flavorful sauce.  Add shredded or grated Parmesan cheese to taste.

Creamy Basil Pesto Alfredo (Reduced Fat)

About This Recipe

Basil is a strong antioxidant, has anti-bacterial properties, and has anti-inflamatory effects.  It's also a rich source of Beta-carotene, magnesium, iron, calcium, potassium and Vitamins C and K.  This recipe is a very quick and easy to make in a small food processor.  I pair it with some Barilla Plus (yellow box) pasta, which has a bit more protein, less carbs, and good ALA Omega-3 fats.  Better yet, try making my HOMEMADE HI PROTEIN NOODLES <--recipe here

Ingredients

  • 1/2 C. PACKED Basil Leaves (coarsely minced)
  • 4 Cloves Garlic (pressed)
  • 2 Tablespoons Extra Virgin Olive Oil
  • 4 Ounces Light Cream Cheese (Neufchatel)
  • 1/2 Cup Lowfat Cottage Cheese
  • 1/4 Cup Parmesan Cheese (grated or shredded)
  • 3 T. skim milk
  • 1/2 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/2 C. Toasted Pine Nuts or Toasted Slivered Almonds (optional)
Directions

  1. In the bowl of a small food processor combine basil, garlic and olive oil.  Pulse process until basil and garlic are well macerated.
  2. Add remaining ingredients and process until completely smooth and sauce is nicely speckled with bits of basil.
  3. Toss 2/3 of sauce with one 14.5 oz. package of cooked pasta, top servings with remaining sauce and garnish with toasted pine nuts or almonds and additional Parmesan cheese.  Serve immediately, if not sooner.

Chicken Breasts on Spinach Fettuccini with Garlic Mushroom Wine Sauce

About This Recipe

High protein, low fat, and huge in flavor, this one dish meal will have you asking for more. . .Go ahead, it's GOOD for you TOO!

Ingredients

  • 3 Tbsp. Extra Virgin Olive Oil
  • 6 Cloves Garlic (divided)
  • 8 Oz. Button Mushrooms, Sliced
  • 1 (14-1/2 oz) Can Low Sodium  Chicken Broth
  • 1 C. Dry Vermouth
  • 2 Tbsp. Cornstarch
  • 8 Boneless, Skinless Chicken Breast Halves (about 4 oz. each)
  • 1 Lb. Spinach Fettuccini
  • 2 Big Handfuls Shredded Parmesan Cheese (omit for Kosher)
  • Salt and Pepper to Taste

Directions

  1. Take two (of the 6) cloves of garlic and smash them with the broad side of a chef's knife.  Rub the smashed garlic cloves on both sides of chicken breasts.  Season breasts on both sides with salt and fresh ground pepper. 
  2. Grill or Broil Chicken Breasts until cooked through. 
  3. While chicken breasts are cooking, drop the pasta into boiling salted water and cook according to package directions, just until al dente.
  4. Press or mince remaining 4 cloves of garlic and saute the garlic and the mushrooms in the 3 Tbsp. of EVOO.   Season with salt and fresh ground pepper, and saute until the mushrooms give up most of their liquid.
  5. Combine Vermouth, Chicken Broth, and Cornstarch in a small bowl or pitcher.  Stir, and add the cornstarch/broth/wine mixture to the mushrooms and bring to a gentle simmer, whisking constantly.  Simmer until sauce is slightly thickened and satiny.  Taste and adjust salt and pepper. 
  6. Drain pasta and place onto serving platter.  Top pasta with the chicken breasts, and pour all of the garlic mushroom wine sauce over the breasts and pasta.  Sprinkle with shredded Parmesan cheese.   Serve immediately.

Northern Italian Spaghetti Sauce with Meat

 
About this Recipe

This recipe comes from a good friend Rosemary Andreozzi Schwenk, who's ancestors hail from Lucca.  This sauce, with a hint of cinnamon, nutmeg, and allspice is typical of the region.  Rosemary's original recipe used garlic salt (which some say is necessary for good sauce).  In this version, I use fresh garlic instead and add mushrooms which are a natural aromatase inhibitor.

Ingredients


  • 4 lbs. lean ground beef
  • 1/4 C. Extra Virgin Olive Oil
  • 6 cloves garlic (peeled and pressed or minced)
  • 1 bunch Italian or Curly Parsley (minced)
  • 3 med. Onions
  • 2 Organic Carrots
  • 3 Ribs of celery
  • 2 26-oz cartons Chicken Stock (divided)
  • 1-2 Tablespoons Salt (depending on taste)
  • 2 teaspoons Black Pepper (or more to taste)
  • 1 teaspoon Nutmeg
  • 3/4 teaspoon Allspice
  • 1 teaspoon Cinnamon
  • 1 15-oz can Tomato Sauce
  • 2 12-oz cans Tomato Paste
  • 2 7-oz cans Button Mushrooms (stems and pieces are fine)

Directions

  1. Working in a large non-reactive roasting pan (with cover), brown the ground beef with the garlic and parsley on stove top in 1/4 C. olive oil.
  2. Working in 2 or 3 batches, puree the onions, carrots, and celery in a food processor with 1/2 of one carton of chicken stock.
  3. Add the pureed vegetable mixture to the browned meat and stir to thoroughly combine.  Cover the roaster and bake in a 425 degree oven for 15 minutes.
  4. Remove the roaster from the oven and add the salt, pepper, nutmeg, allspice, cinnamon, and the remaining half of the first carton of chicken stock.  Stir until thoroughly incorporated and return the covered roaster to the oven for another 15 minutes.
  5. Remove the roaster from the oven and add the tomato sauce, tomato paste, and remaining carton of chicken stock.  Thoroughly stir to combine.  Add the mushrooms (juice and all) and stir again.  
  6. Lower oven temperature to 350 degrees and roast again in the covered roaster for 1-1/2 to 2 hours WITHOUT STIRRING.  Use care to NOT scrape any burned sauce that has splashed on the sides of the roaster, as it will make the sauce bitter. Taste and adjust seasonings as desired.
